I'm linking up today, as usual, with a great spring/summer pasta recipe
Tomato Mozzarella Pasta:
Ingredients:
3 pints of grape tomatoes
1 lb of Pasta (rotini,fusilli, or penne)
Olive Oil
Fresh Basil
Balsamic Vinegar
Salt
Pepper
1 tbsp Minced Garlic
Large fresh ball of mozzarella
Directions:
1. chop the tomatoes in half lengthwise. Toss them with olive oil, salt and pepper. Spread onto a baking sheet and bake in the over for 45 min at 400 degrees.
2. Cut ball of mozzarella into small cubes, chop large portion of fresh basil.
3. Boil the pasta
4. Mix the mozzarella, pasta, basil, garlic, and tomatoes in a bowl. Add olive oil, balsamic vinegar, and salt and pepper to taste.

mozzarella cheese will forever have my heart. that looks delish!
ReplyDeleteThis is one of my favorites with black olives. I've never roasted the tomatoes though. Great idea. I'm totally doing that next time.
