Tomato Mozzarella Pasta Salad

Happy April Fool's Day! I spent a good part of elementary school playing pranks on family members and friend's family members for April Fool's Day- something I hope my future children never discover. Nevertheless- April is now here and hopefully the weather will finally realize that!

I'm linking up today, as usual, with a great spring/summer pasta recipe


Tomato Mozzarella Pasta:
Ingredients:

3 pints of grape tomatoes
1 lb of Pasta (rotini,fusilli, or penne)
Olive Oil
Fresh Basil
Balsamic Vinegar
Salt
Pepper
1 tbsp Minced Garlic
Large fresh ball of mozzarella









Directions:
1. chop the tomatoes in half lengthwise. Toss them with olive oil, salt and pepper. Spread onto a baking sheet and bake in the over for 45 min at 400 degrees.



2. Cut ball of mozzarella into small cubes, chop large portion of fresh basil.

 
















3. Boil the pasta

4. Mix the mozzarella, pasta, basil, garlic, and tomatoes in a bowl. Add olive oil, balsamic vinegar, and salt and pepper to taste. 

Enjoy!

  2. This is one of my favorites with black olives. I've never roasted the tomatoes though. Great idea. I'm totally doing that next time.
